Serves 4 – 6
Ingredients:
• 300g green beans, topped and tailed
• 250g frozen peas
• 1½ cups broccoli florets
• 2 Cups, Spinach Leaves
• 1 lemon, finely zested and juiced
• 1 large handful of mint leaves, torn
• 100g feta, crumbled.
• 1/4 cup olive oil
Method:
• Place beans, broccoli and peas to a saucepan of boiling water for 2-3 minutes until bright green. Drain and refresh under cold water.
• Place beans, peas and broccoli in a large salad bowl, along with lemon zest, mint and feta.
• Whisk lemon juice and oil together in a jug. Season with pepper.
• Pour dressing over salad and lightly toss to combine when ready to serve.
